     Two Recipes for baked beans

 

Easy Baked Beans

If you are like me you love baked beans.  But what is so simple to find in the US and  England is so difficult in this land of so many beans.  But Mexicans don’t put tomatoes or sugar into their beans.  I mixed this up the other day and I thought they were very good. 

 Take 2 Cans of Frijoles Bayos Enteros    Drain them reserving the liquid

Add 1/2 cup of Ketchup to the beans
Add 1/4 cup of Brown Sugar
Add 1/2 cup of the reserved liquid
If you have it add 1 Tablespoon of Molasses (or some of that cone shaped stuff you can get in the mercado)
A bit of mustard… (just a short squirt)

Mix well,  and place in an ovenproof dish,  put a few slices of bacon on top and place in the oven for 1 hour at 350… Best if you stir them up about 45 minutes into the baking.

 

 

Sun Valley Idaho Baked Beans

 

1 tablespoon vegetable oil
1 large onion, peeled, chopped
1 medium green pepper, washed, cored, chopped
2 cans (16 ounces each) pork and beans
1/4 cup brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 cup ketchup
1 tablespoon molasses
1/4 cup whiskey, preferably Jack Daniels

preheat the oven to 350 degrees.

In a large skillet, heat the vegetable oil. Add the onion and green pepper and saute until both are soft. Transfer the onion mixture to a 1-quart casserole dish. Stir in the pork and beans, brown sugar, Worcestershire sauce, mustard, ketchup, molasses and whiskey. Bake for 40-45 minutes.

Remove from oven and serve.

Makes 8 servings.
