Carrot Cake
This has to be my favorite cake recipe. Its actually the only cake recipe I make from scratch.  Otherwise I just use mixes. 

1 1/2 cups Corn Oil
1 3/4 cups sugar
3 Eggs
1 8 oz can Crushed Pineapple
1 tsp Ground Cloves
2 Cups  All purpose flour
2 tsp  Baking Soda
1/2 tsp  Salt
3 tsp  Cinnamon
2 cups peeled and grated Carrots
1 Cup  Chopped Walnuts

Beat together corn oil, sugar and eggs until well combined. In a bowl, sift together flour, baking soda, salt, cinnamon and cloves. Add to egg-sugar mixture, mixing well. Drain the pineapple and add the carrots, nuts and pineapple to bowl. Blend to mix well.

Pour batter into greased and floured 10 inch cake pans (or 9x13)

Bake at 350 for 50-60 minutes or until a pick inserted in center comes out clean. Let cool on rack and prepare frosting.

 

Cream Cheese Frosting

Cream together 2 packages (8 oz) of cream cheese
1 cup of Confectionary sugar
1 tsp vanilla blending well.
Sprinkle with ¾ cup of coconut.
