Chocolate Chip Cheesecake
Follow the directions carefully for a moist, soft, wonderfully tasting cheesecake.  This is a fairly easy to make Cheesecake but it has a wonderfully creamy flavor.. One of my favorite deserts 

Crust

2 Cups Crushed Chocolate chip Cookies (use your food processor)
1/4 cup sugar
1/3 cup Butter or Margarine (melted) (in Mexico thats one stick) 

Cheesecake

3 packages Cream Cheese (8 oz)
1 cup sugar
3 eggs
1 cup sour cream
1/2 teaspoon vanilla extract
1 1/2 cups of miniature chocolate chips (one 16 oz package) 

In a small bowl combine cookie crumbs and sugar, stir in the butter.  Press onto the bottom and 1 inch up the sides of a 9 1/2 or 10 inch spring form pan,  set a side.

In a mixing bowl beat cream cheese and sugar until smooth. Add eggs beating on low until just combined. Add sour cream, vanilla and chips beat until just blended. Pour over crust.

Bake at 350 for 45-55 minutes or until center is almost set.  Cool on a wire rack for 10 minutes.  Carefully run a knife around the edge of the pan to loosen.  Cool 1 hour longer, then refrigerate over night.  Remove the sides of the pan and if desired sprinkle some additional chips over the top of the cake.
