Cucumber Chicken

 


Cucumbers are used in a lot of Mexican Cooking.  Some families serve them freshly cut up with every meal.  A little squeeze of fresh lime juice over them just before eating adds to the flavor. 

A very refreshing, light Taco? or Torta? its a bit of both

1/2  cup plain yogurt
1/4  cup cucumber -- finely chopped
1/2  teaspoon  dried dill weed
1/4  teaspoon  dried mint
4 - 8  flour tortilla's
4 lettuce leaves
6 ounces  thinly sliced fully cooked chicken breast
1 tomato -- thinly sliced
1/3  cup feta cheese -- crumbled

First make dressing:  Stir together yogurt, cucumber, dill weed and mint in a small bowl.

For each sandwich: place a tortilla on a plate.  Top with lettuce, chicken and tomato.   Spoon dressing on top.  Sprinkle with feta cheese.  Fold in half and lay sideways on the plate or wrap in foil to hold together.
