CHUNKY GUACAMOLE
Your kids can use a table knife to dice the avocado--the remaining
ingredients just need to be measured and stirred.
3 ripe avocados, peeled and diced, 1 seed reserved
1/3 cup fresh lime juice
1 cup Fresh Salsa*
Sprinkle the chopped avocado with lime juice, stir in the salsa, and place
the mixture in a bowl lined with lettuce leaves. If you don't plan to serve
it immediately, place an avocado pit in the bowl to prevent browning, and
cover it tightly with plastic wrap. Store in the refrigerator. Makes 4 cups.
Note if you don't make fresh salsa, use the bottle kind, but cut back on
the amount and add some chopped tomatoes, the flavor and texture of chunks
of tomato are good.
