Mango Poppy Seed Dressing

Last winter in Florida we tasted Coconut Shrimp for the first time.  The recipe for the shrimp was easy enough to find, but the dip served with it was more elusive.  It was a mango sauce.  I finally got the proportions right and  want to share this dressing, it is wonderful with the shrimp, but also on fruit salad, or with greens, or anywhere you would use a French dressing:

   1      cup            mango pulp
   1/4  cup            sugar
   1      teaspoon    salt
   1      teaspoon    dry mustard
   1/2  teaspoon    onion powder
   1/4  teaspoon    garlic powder
   1/3  cup            cider vinegar
   1      tablespoon lemon juice
   1      cup            salad oil
   1 1/2  tablespoons  poppy seeds

Combine mango pulp, sugar, salt, dry mustard, onion powder, cider vinegar and lemon juice in blender.  Drizzle in oil, blending until thickened.  Stir in poppy seeds. Store in refrigerator.  Shake to mix before serving.
