SPAM Taco's
Spam is quite popular in Mexico.  You can purchase the cans in almost every store. I have to admit I have never seen Spam Taco's but this recipe sounds good.  

 1 12 oz can of Spam
4  eggs
4 tablespoon water
4 teaspoon Honey Mustard
4 slices of Velveeta Cheese
4 Flour Tortillas

In a skillet or microwave begin warming the tortillas.  Beat together eggs and water.  Cut Spam into 4 slices, then into thin strips.  Brown in skillet.  Scramble the eggs.  Now, you're  ready to make the roll-up. Start with the tortilla, then  some egg, cheese, Spam and the honey mustard.  Roll up and serve.  Makes 4 Roll-Ups.
