BASIC MEXICAN VINAIGRETTE
One of the first things I noticed living down here is that most Mexican salad dressings served in restaurants are horrible.  I have always wondered about that as Mexico is the home of the Caesar Salad.  But one thing they do is a nice Vinegar and oil,  They always put mustard in it, try it with both Dijon style, or the powdered.  Then toss in some fresh herbs for a bit more flavor and for great looks.  This just takes a bit of work it can be prepared in 5 minutes or less.


3 tablespoons wine vinegar or fresh lemon juice
1 teaspoon Dijon-style mustard
2/3 cup olive oil


In a bowl whisk together the vinegar, the mustard, and salt
and pepper to taste, add the oil in a stream, whisking, and
whisk the vinaigrette until it is emulsified.

Put this in a bowl with some sprigs of rosemary, some basil leafs, and any other fresh herbs you happen to have.  It looks really really nice.  (tastes great to)  (if you don't have any fresh herbs you can use some dried bay leafs and fresh chives, parsley.. Let your imagination run wild.  just throw some leafs in the bowl! 


Makes about 1 cup.
